Pork Roast and Honey Lime Enchiladas

I would use a whole packet of the Ranch instead of half for a 2 lb. roast. I used tenderloin cause I had it, but I think Boston Butt would be good. I made 4 lb of meat. It served 2.5 of us on Sunday for lunch and then the rest filled a 13x9 of enchiladas. (I also had some chicken that made a smaller 8x8 pan of chicken enchiladas.) We had parmesan roasted asparagus for a side.

I used the flour tortillas that are the size of a dessert plate. I had a half a rotisserie chicken that I used and the left over pork roast. The pork ones were definitely the best, but the chicken ones were good. I was just surprised how DELICIOUS the pork enchiladas were!
