Introducing some of our friends

Here's Thomas... he and Justin (oddly) enjoy 6:30-7am phone calls. Who really wants to chat that early? Engineers.

The guy on the left is Steve. He's the one who took Justin at 3am to the hospital for his appendicitis, so you know we can definitely count on him!

Luke is one of maybe three friends of Justin's who isn't 5, 10+ years older than him. ;)

Carla is one of my closest friends. We can not talk for a week, and then we can pick right up and talk like crazy the next week.

BFFs

Izzy and Margaret love, love, love each other. They are so cute to watch, and I am amazed by how sweetly they play together. It's a one of a kind and very special friendship.

Pops & Gram

Izzy has shortened a lot of names recently, so she's called Grammy "Gram" and Poppy "Pops." Today she informed me that she wanted to call Clara "Claire." She has a mind of her own!

Nevertheless, she loves all her grandparents so much!

The LaPlants

We enjoy time with our good friends, the LaPlants, and they have known Justin since he was young. Dawn and Tom love our girls so much!

Festive hairbows!

On June 30, my friends Naphtali, Marissa, and Angie came over for our monthly hairbow making get-together. We switch hostessing each month, and this time it was my turn to host and provide appetizers. Look at these bows in action:

I made the bow for Izzy's dress and pinned it on:

I was feeling left out, so I dressed up my flip flops:

Being girly is so fun!

Aunt JEAN!

Izzy calls Jennifer "Jean"... and she sure does love her aunt.

She also LOVES opening presents. I was a proud mother watching Izzy being so mannerly and taking each gift carefully to Jennifer to be opened. Too cute!

I like this pic of Justin's Aunt Pam and me:

And here's the momma-to-be with me:

Cannot wait to see our little nephew!

He's coming...

Justin's sister, Jennifer, is due in just a few more weeks with her first baby! He will be the first grandson for the Clarks and the first grandchild for the DeBoers. Janet Adams hosted a shower in her home with Mary Vaught, and Justin's mom's family came to this shower. We'll have pictures from another shower next weekend.

A real, live babydoll!

Ok, so the day has finally come and gone... the day that I found out I have my very own, live babydoll with braid-able hair! WOOOOOHOO. It's a dream come true. Izzy's bed is a little high up off the floor, so I sat her on it, and gave her a Curious George book to read. And away my fingers went...

Izzy's all dressed up and ready to go the baby shower for her Aunt "Jean."

Love her!

Deliciousness with Roasted Veggies

My friend, Naphtali, introduced me to orzo pasta at her parents' home when her parents lived in Camp Hill, PA. This past spring, she made this orzo dish for me here in Charlotte, and I was IN LOVE. It's easy to make, but it does take a little time in the kitchen. The nice thing is that you serve it room temperature, so you can make it ahead. This dish would be great for a women's luncheon or as a side dish at a cookout. I have tweaked it to be suitable to ME! ;)

Orzo with Roasted Vegetables
originally by Ina Garten of Food Network

(It reallllllllly needs a more catchy and appealing name.)

Ingredients:1 small eggplant, peeled and 3/4-inch diced
1 red bell pepper, 1-inch diced
1 yellow bell pepper, 1-inch diced
1 red onion, peeled and 1-inch diced
(Options: I added summer yellow squash & zucchini. Don't skip the eggplant, if possible.)
2 garlic cloves, minced
1/3 cup good olive oil
1 1/2 teaspoons kosher salt
1/2 teaspoon freshly ground black pepper
1 pound orzo or rice-shaped pasta (do not overcook)

Dressing:1/3 cup freshly squeezed lemon juice (2-3 lemons)
1/4 cup good olive oil
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper

To assemble: 4 scallions (green onions), minced (white and green parts)
1/4 cup pignolis (pine nuts), toasted (optional)
3/4 pound good feta, 1/2-inch diced (not crumbled)
15 fresh basil leaves, cut into julienne
(Option: Add plum tomatoes sliced in half, grilled chicken, or shrimp.)

Directions: Preheat the oven to 425 degrees F. Toss the eggplant, bell peppers, onion, and garlic with the olive oil, salt, and pepper on a large sheet pan. Roast for 35 minutes, until browned, turning once with a spatula.

Meanwhile, cook the orzo in boiling salted water for 7 to 8 minutes, until tender. Drain and transfer to a large serving bowl. Add the roasted vegetables to the pasta, scraping all the liquid and seasonings from the roasting pan into the pasta bowl. For the dressing, combine the lemon juice, olive oil, salt, and pepper and pour on the pasta and vegetables. Let cool to room temperature, then add the scallions, pignolis, feta, and basil. Check the seasonings, and serve at room temperature.

I added chicken but left out the pine nuts and served this dish for lunch.
This recipe fed approx. 6 women.

Everyone wanted the recipe, just like I did after eating it at Naphtali's house.
Deliciousness.

Family Visit!

Justin's grandma, cousin, and two of his aunts had a little visit here in Charlotte for Jennifer's baby shower and to see all of us! We had such a great time with them, and we REALLY hope they come back again this summer. Hint, hint. :)
